Chili Crisp Cucumber Salad With Tofu
This spicy, zesty cucumber salad is packed with plant-based protein, ready in under 10 minutes with 5 ingredients.

This refreshing, Asian-style spicy cucumber salad is one I’m always repeating, meal prepping and keeping on my weekly meal rotation, especially in the hot summer months when — let’s be real — I’m just sweating WAY too much to turn on the stove.
It’s ready in less than 10 minutes, comes together in one bowl and is packed with plant-based protein in every bite. It has a bit of a kick thanks to chili crisp or chili crunch of your choosing. This cucumber salad recipe is vegan-friendly too.
🥒 Chili crisp cucumber salad ingredients
- Soft tofu
- Cucumber (I love the thinner-skinned English- or Japanese-style cucumbers, but any will work just fine!)
- Chili crisp/crunch of your choice
- Soy sauce
- Rice vinegar

⭐️ Easy variation: Smashed cucumber salad
This makes for a great smashed cucumber salad too, if you’re looking to up the fanfare, though I usually cut mine in quarter-moons because I find it a little bit faster.
To smash cucumbers, hit them with a mallet, heavy spoon or other object until they begin to split open.
🍴 How to serve this chili crisp cucumber salad
I love to throw this on top of rice and let it soak up all the sauce at the bottom of the bowl. It’s also great with cold udon noodles.
This also makes a wonderful appetizer or side dish, right at home next to dumplings or a simple, grilled protein.
🥡 Why this makes great meal prep
The longer the tofu and cucumbers marinate in the dressing, the better! This tastes fantastic the next day.
