Ingredients

For the burrito:
  • 4 tortillas
  • 6 eggs
  • 1 c. potatoes cubed
  • 1⅓ c. Kalua pig & cabbage
  • ½ c. shredded cheddar or to taste
  • Garlic powder
  • Paprika
  • Salt and pepper to taste
  • Hot sauce optional
  • Olive oil
For the salsa:
  • 1 c. cherry tomato sliced
  • ¼ c. green onion sliced or red onion (finely diced)
  • 1/4 tbsp. cilantro chopped
  • 2 limes
For the kalua pig:
  • 1 lb. pork shoulder/pork butt
  • .5 tbsp. Kosher salt
  • 1 tsp. liquid smoke
  • 1 bay leafs
  • 1 c. water
  • 1/3 head of white cabbage sliced

Equipment

  • Pressure cooker/slow cooker (if you're making kalua pig from scratch)
  • skillet

Method

For the kalua pig:
  1. Cut pork into 3 pieces. Cover in salt.
  2. Place pork into instant pot or pressure cooker and add water, liquid smoke and bay leafs. Cook on manual for 40 minutes, sealed. If using slow cooker, let cook for several hours, until fully cooked.
  3. Remove pork and shred with forks. Pour out about ¾ of water (if it’s fatty, don’t pour down your sink!).
  4. Place Instant Pot on sautee mode. Add cabbage, stirring occasionally.
For the burrito:
  1. Toss potatoes in garlic powder and paprika to taste, or just enough that they are covered in a thin layer of the spice.
  2. On medium high heat, add potatoes in a pan with olive oil. Flip occasionally until crispy, then place in a bowl and set aside.
  3. If you’re making homemade salsa, combine tomato, onion, cilantro and lime in a bowl and set aside.
  4. Scramble eggs or cook however you like.
  5. Microwave kalua pig to reheat. Microwave tortilla about 30 seconds to warm.
  6. Add ingredients to warm tortilla, in rows, and sprinkle cheese on top.
  7. Roll burrito and serve!
